Lemon Cakes Game of Thrones

Ingredients: 2 1/2 cups flour

1 tsp. salt

1/2 tsp. baking powder

1/2 tsp. baking soda

2 tbs. lemon zest

3/4 cup fresh lemon juice

1 cup butter, softened

1 cup buttermilk

2 1/2 cup sugar

2 eggs

2 lemons, thinly sliced and seeded

Directions:  1) Preheat oven to 350 degrees.

2) Boil lemon slices for about 15 minutes in 1 cup of water and 1 cup of sugar.

3) Grease a muffin tin with butter, vegetable oil or non-stick spray.

4) In a mixing bowl, combine flour, baking powder, baking soda, and salt.

5) In another bowl,  beat butter and 1 cup of sugar until light and fluffy.

6) Beat in eggs, then beat in 2 tablespoons of the lemon juice and lemon zest.

7) Beat in flour mixture and then buttermilk.

8) Place 1 lemon slice in the bottom of each muffin cup.

9) Divide batter between cups, pouring over the lemon slices.

10) Bake until cakes are firm and golden, about 15 to 20 minutes. Remove from oven and let cool.

11) Mix together remaining lemon juice and sugar. Poke holes into the cakes, then slowly pour lemon and sugar mixture over the cakes so the juice gets absorbed into the cakes, let set for about 5-10 minutes.

12) Remove cakes from muffin cups and serve lemon slice side up!

2. How many books have you read so far?

I have not finished anything.  I am not having the most productive readathon.  Mostly cheering this time.  Maybe I will get on a roll this evening and not fall asleep.


3. What book are you most looking forward to for the second half of the Read-a-thon?

I’m just hoping to finish something.

4. Did you have to make any special arrangements to free up your whole day?

I did not have any luck freeing up my day this time.  I just got back from a work trip and had things to catch up on not to mention jet lag so I ended up taking a nap.

5. Have you had many interruptions? How did you deal with those?

Yep, I have had lots just I am just going with the flow this time.  It is not a competition and I just want to enjoy.

6. What surprises you most about the Read-a-thon, so far?

Honestly, that I feel asleep at 3pm for 3 hours.

7. Do you have any suggestions for how to improve the Read-a-thon next year?

I love the format for cheering this time!

8. What would you do differently, as a Reader or a Cheerleader, if you were to do this again next year?

I would try to plan my day to be clear!

9. Are you getting tired yet?

I was and took a nap.

10. Do you have any tips for other Readers or Cheerleaders, something you think is working well for you that others may not have discovered?
